Such as fatty acids can vary considerably, the scientists indicate the number of carbons and double bonds in a fatty acid. For example, a fatty acid will be 6:03 p.m. 18 carbon atoms long and three double bonds. Scientists also use the Omega system to indicate where the double bonds are in a fatty acid. It works like this. If a fatty acid is linked to glycerol, the second closest carbon of the link is referred to as the alpha carbon. Meanwhile, the carbon furthest from the connection with glycerol is called omega carbon. The Omega system is based on the Greek alphabet. Alpha is the first letter of the alphabet and omega is the last. No matter how many carbons are in your fatty acid chain, these carbon atoms will always be addressed in this way. Looking at a fatty acid glycerol not related to the alpha carbon would be the first carbon atom adjacent the carbon atom bonded to two oxygen atoms. Table 5.1 lists the common fatty acids and their abbreviations. To indicate the position of the first double bond, we count the number of carbons the first carbon of the first double bond from the omega end. For example, if the first double bond starts at the third carbon atom, it is an omega-3 fatty acid. Similarly, if the first double bond appears in the sixth or the ninth carbon atom, this would be ω-6 and omega-9 fatty acids, respectively. For most, when addressing the polyunsaturated fatty acids, it indicates that the position of the first double bond, as a result of double bonds seem to occur in series after a saturated carbon atom.
